AN ELEVATED DINING EXPERIENCE IS COMING TO THE COAST

Queensland’s hottest dining destination is launching on the Gold Coast, with the announcement of COAST Beach Bar & Kitchen opening mid-June.

Located in the new Meriton Suites along the Surfers Paradise Esplanade, the 750 sqm COAST Beach Bar & Kitchen will adorn the first floor of the hotel with its sophisticated design and dining space.

The restaurant will feature modern Australian cuisine with flare, created to share family-style, specialising in locally sourced land and sea options cooked in a Josper oven that combines traditional charcoal grilling with innovation for maximum flavour.

COAST will house flexible but distinct spaces, spilt into a 110-seat restaurant and 160-seat bar, including a main dining room, lounge dining area, private booths, spacious outdoor bar area for wining and dining, and a stand-out 14m marble bar.

With over 20 years’ experience, local husband and wife hospitality duo, Justin and Elizabeth Allie – proprietors of Longboards Laidback Eatery and Bar in Surfers, The Fish Shak in Southport and catering company Gourmet en Counter – are the team behind the sizeable project.

“We have been strong investors in the Gold Coast hospitality industry since 2007 with our current venues, and now with this $2.5million COAST project, it will be our biggest commitment and best yet,” said Justin.

“The venue will be situated in the prime Gold Coast location of Surfers Paradise, with uninterrupted ocean views from our expansive beach bar, and is designed around entertaining with a relaxed, casual and modern vibe.”

Chef Rhett Willis, who most recently appeared on television’s MasterChef: The Professionals, coming in second, has over two decades of culinary experience in some of the country’s best venues, including Jellyfish and Cha Cha Char.

Mr Allie said the food philosophy was quite simple, with a fresh, local emphasis, using only the best seasonal produce available.

“Our focus at COAST is to utilise fresh regionally sourced ingredients. Our menu will feature a variety of share style dining options with a large focus on land and sea produce, cooked in our signature Josper wood and charcoal oven.”

“Star dishes will include Chef’s in house aged cut of beef smoked at the table, or our duck liver parfait stuffed brioche doughnuts. Our menu will also cater to all, with extensive vegetarian options on offer.”

“The use of the Josper – a traditional Spanish charcoal oven – delivers a bespoke smoked flavour, sealing in the aromas and moisture to deliver exceptional gastronomical menu options,” added Justin. 

The venue will exhibit a 2,000 strong wine bottle cellar that will take centre stage in the restaurant, offering up to 120 wines, with roughly 80 per cent of the collection featuring Australian wines from only the best various grape-growing regions in the country.

COAST will also offer an impressive vintage vino collection with prized drops from Torbreck, Yalumba and Veuve Clicquot, to enjoy on their own or with a complementary food pairing.

While the venue’s feature piece – a 26-year vertical Penfolds Grange Magnum Collection, valued at over $60,000 – is to be enjoyed exclusively at COAST by devotees of fine wine.

The new venue’s design and fit-out has been delivered by boutique Gold Coast architect firm, Space Cubed Studio, with previous projects including Loose Moose, Rubi Red, Cali Beach and La Luna, to name a few. With builders, Open Projects Group, on the tools.

COAST’s design will echo the restaurant’s land and sea focus, with colour themes of muted blue and green, contrasting brass, leather, and marble fixtures.

“We want to play an active role in growing Surfers Paradise as an iconic food and drink destination within Australia.

“We firmly believe our investment in this stand-out venue, along with that of other hospitality operators, is sure to get us there as the dining scene evolves and reignites with new operators and exciting dining spaces, breathing life into ‘Australia’s Playground’,” Mr Allie added.
